Greek Baked Fish (Psari Plaki)

Ingredients

  • 1.5 kg Fish (Hake or Kingklip) skinned & deboned
  • 4 Carrots
  • 8 Stalks Celery
  • 4 Tomatoes
  • 2 Onions
  • 5 Cloves Garlic
  • 5 Potatoes
  • Salt
  • Pepper
  • 1 cup Chopped Parsley
  • 3 Lemons
  • Olive oil

Method

    Rinse the fish with cold water and then lay it out flat.

    Add salt and pepper to both sides of the fish.

  3. 3

    Add some olive oil to the metal oven tray and smear it all over until the bottom is covered.

  4. 4

    Take the fish and lay it in the tray. Put the fish in the centre because the vegetables will go around it.

    Peel the carrots and cut them into 1cm slices.

  6. 6

    Clean the celery and cut them into 1cm slices.

  7. 7

    Peel potatoes and cut them into 1cm slices.

  8. 8

    Peel the onions and cut them into 1cm slices.

  9. 9

    Add all the vegetables into a large mixing bowl and then add the chopped parsley.

    Add olive oil, lemon, salt and pepper to the vegetables and mix it all up.

    Place the vegetables around the fish in the tray, making sure the potatoes are on the top.

    Slice tomatoes and place on top of the potatoes.

  13. 13

    Cover the tray with foil.

    Place in the oven for 1.5 hours - 2 hours at 180℃.

    After 1 hour take the fish out of the oven and remove the foil. Place the tray back in the oven until cooked.

    The fish is ready once the potatoes and carrots are soft and tender.
