Chocolate Cake

- 1.5 cup Flour
- 1 cup Castor Sugar
- 0.25 cup Cocoa
- 0.25 tsp Salt
- 2 tsp Baking Powder
- 0.5 cup Oil
- 0.5 cup Boiling Water
- 1 tsp Vanilla Essence
- 5 Eggs
- 1 tsp Coffee
- 1 tsp Cinnamon
- 3 cup Icing sugar
- 2 tbsp Butter
- 0.5 cup Milk
Method

Get a large bowl and sieve in the flour, castor sugar, cocoa & salt.

Take the eggs and separate the egg yolks and egg whites.

Make a well in the center of the dry ingredients and add the oil, boiling water, vanilla essence, egg yolks, coffee & cinnamon.

With a electric mixer mix together the mixture until smooth.

In a separate bowl beat the egg whites until they are stiff.

Fold in the egg whites into the chocolate mixture until all mixed together.

Add the baking powder.

Prepare the 2x cake tins by smearing butter all over and then adding flour. Shake the flour around so that it sticks to the butter in the tin. Alternatively, you can use spray.

Pour the cake mixture evenly in both tins.

Preheat the over to 180 degrees celcius.

Put cakes in the over for 25 minutes.

Add icing sugar and butter to a mixing bowl.

Mix together and slowly add in the milk until the icing is at the right consistency.
