Buttermilk Koulouria

- 500 gm Stock margarine
- 1 ltr Buttermilk
- 4 Eggs
- 2 tsp Baking powder
- 1.5 cup Sugar
- 1 pinch Salt
- 1 tsp Bicarbonate of soda
- 1 handful Aniseed
- 2.5 kg Self-raising flour
- Sesame seeds
- 1 Dried whole cumin (mavrogoko)
Method

Sift all dry ingredients together

Add butter and mix into dry ingredients by hand

Add eggs and aniseed
- 4
Slowly add the buttermilk
- 5
Roll dough by hand into long strips (1 cm width)

Zigzag together, cut strips

Place the dough on the sesame & cumin until covered

Let loaf cool then break them into pieces and place on tray not touching each other.

Place on greased baking tray and bake at 180°C until they have risen and browned.

Place back in the over at 100°C for 1 hour until they are dried out

Kneed the dough until ready to roll

Rinse aniseed & mavrogoko under water and place on a wet towel on a flat surface. Set aside.
