Durban Curry

- 100 ml Oil
- 1 Onion
- 3 Cloves
- 2 Bay leaves
- 3 Cinnamon sticks
- 1 tsp Fennel seeds
- 0.25 tsp Turmeric
- 0.25 tsp ground Elachi (cardamom)
- 2 tsp Salt
- 2 tsp Grated ginger
- 2 tsp Crushed garlic
- 4 tsp Garam Masala
- 4 tbsp Masala (curry powder)
- 1 tin Chopped tomatoes
- 1 tbsp Tomato paste
- 500 g Lamb
- 6 Potatoes
- 1 pinch Curry leaves
Method

Heat oil and add onion, elachi, turmeric, cloves, bay leaves, cinnamon and fennel seeds

Allow quick to soften. Cook on low heat until onion starts to brown
- 3
Add masala, ginger and garlic, allow a few seconds to cook. Be careful to not burn the masala

Add tomato and tomato paste and cook for 5 minutes on low heat

Add meat and sauté until meat starts to brown

Add tomatoes and potatoes

Add curry leaves

Add water to cover

Add salt

Bring to boil

Lower heat and simmer till meat and potatoes are tender

Serve with some basmati rice or as a "Bunny Chow" in a hollowed out half loaf of bread.
