Ingredients

  • Cheese Mixture
  • 1 kg Cypriot Haloumi
  • 1 kg Pecorino
  • 1 kg Provoloni
  • 1 kg Anari
  • 50g White cheddar
  • 3 packets white sultanas (optional)
  • 2 packets Kanaouri / Hemp seeds
  • 1 small bottle Masticha
  • 200g fresh mint (leaves only, chopped)
  • 1 packet semolina
  • 48 Eggs
  • 4 packets Instant Dry Yeast
  • DOUGH
  • 6 kg cake flour
  • 1 handful salt
  • 2 tsp Mehlebi – Grinded
  • 2 tsp Masticha – Grinded
  • 3 lt Milk
  • 500g Butter – added to lukewarm milk to melt
  • 1 kg Stork Margarine – added to lukewarm milk to melt
  • 2 cups sugar
  • 1 small packet Semolina
  • 5 packets dry yeast mixed with 1 cup sugar and 1 glass lukewarm water
  • SESAME
  • 2 packets Sesame mixed in boiling water to soften – leave overnight
  • 1 packet Mavrokoko
  • 2 tsp Aniseed

Method

  1. CHEESE MIXTURE

    In a small bowl add the yeast with 4 tbsp flour, 1 cup sugar and 1 glass luke warm water. Set aside and allow it to rise.

    In a small frying pan add the kanaouri seeds and fry until browned. Set aside.

    Grate all cheeses and place in a large bowl.

    Add sultanas, masticha, kanaouri, mint, semolina and eggs. Mix together and leave overnight.

    In a pot melt the butter with the on low heat until the milk is luke warm and the butter has melted.

    Add all dry ingredients in a big bowl.

    Make well in centre and add the lukewarm milk mixture.

    Mix till it forms a dough – add more flour or liquid if needed.

    Cut in pieces and beat each piece in the Kenwood and then mix all the pieces together and leave to rise 2-3 times before you start making the flaounes.

    In a strainer add the sesame seeds, mavrokoco and aniseed and rinse. Place a wet towel on the tabletop and spread out the sesame mixture.

    Sprinkle some Baking powder over cheese mixture just before you start making the flaounes

    Take a piece of dough and roll it into a circle about 20cm in diameter. Take a spoonful of the cheese mixture and place it in the middle. Wrap the dough over the cheese, so it ends up like a triangle. Use a fork to press the edges of the triangle.

    Put the flaouna on the sesame mixture and make sure to cover it with the sesame mixture.

    Blush the flaouna with egg (optional)

    Cook in a Thermostat oven at 200°C for 20 minutes or till you see that flaounes cooked and browned all over
