Bolognese

- 1 kg coarsely ground mince, half beef half pork
- 1 chopped onion
- 1 can mashed tomatoes
- 0.5 cup butter or olive oil or combine both
- salt
- cayenne pepper
- 1 stick cinnamon

Place mince in a heavy based saucepan with about half a cup of water over medium high heat and allow to semi cook, while ensuring that all lumps of meat are broken up. Add more water if it evaporates too quickly.

When the water has evaporated and the mince is semi cooked (it will be whitish at this stage) add the butter / oil and stir into the meat to fry it lightly. Add the onion and mix into the mixture. Allow the onion to brown with the meat, mixing to ensure it doesn't burn. You will hear the mince mixture starting to 'crackle' lightly at this point and it will stick to the base of the pot slightly.

Add the tomatoes (you can add more tomato if you want the mince more saucy or want to increase the volume of the bolognese so it will go further) and stir well to release any meat bits stuck to the pot. Add the salt, pepper and cinnamon stick and lower the heat so that the sauce is barely simmering.

Allow to simmer until you have the consistency you like.
